For those of us that are always in a hurry, I present to you a fast and easy recipe! I give you the delightful combo of protein and goodness. Quinoa is naturally gluten free and contains iron, magnesium, manganese, phosphorus, calcium, fiber, vitamin E and B-vitamins. It is one of only a few plant foods that are considered a complete protein, containing all nine essential amino acids. It also contains large amounts of flavonoids, including quercetin and kaempferol. These are potent plant antioxidants with numerous health benefits. Another important benefit of quinoa is that it is high in fiber, much higher than most grains (12-27 grams of fiber per cup). Quinoa has a low glycemic index, which is good for blood sugar control. The glycemic index is a measure of how quickly foods raise blood sugar levels. It is known that eating foods that are high on the glycemic index can stimulate hunger and contribute to obesity.
- 1 cup cooked Quinoa (if quinoa is not yet cooked, use one cup of quinoa and two cups of water. Bring to boil...takes approx 15 mins to cook, when finish let it cool down)
- 2 avocados
- 2 tomatoes
- 1 small onion/ half a regular onion
- 9 sprigs of cilantro
- 2 tbsp olive oil
-Salt & Pepper to taste
Cut tomatoes and onion into small squares, cilantro finely chooped and insert in a medium bowl with Quinoa. Add olive oil and lime, mix all the ingredients carefully, then add salt and pepper to taste. When ready to eat, cut the avocados into squares and add it to your serving (don't recommend mixing it beforehand because avocados will ripe and won't be as fresh). Waaaallaaah! So easy huh? This is why this recipe is one of my favorites, it's so easy and yet sooooooo delicious !
